Founded in 5 (1619th year of the Genna era) in the early Edo period, this long-established funazushi restaurant has been serving for nearly 400 years. Since moving from Ise Province to work as a chef for the Omizo Domain, the restaurant has continued to preserve the traditional techniques of "momiji funazushi" that have been passed down since ancient times in Takashima, Omi. This is a carefully crafted funazushi made from rare Nigoro crucian carp from Lake Biwa and high-quality Omi rice, which are aged over the years in traditional wooden barrels. The refined taste, which combines a unique aroma, sourness and umami, makes it a popular snack to accompany alcoholic drinks or as a dish with tea.
